Average spend per cover is total revenue divided by the number of guests over the same period. It is more stable than average bill value, because bill value moves with party size while spend per head does not.
It is the number most directly moved by upselling, menu pricing and menu design, which makes it the usual target when revenue needs to rise without more guests.
Tracked by day and by service, it also reveals which trading periods carry higher-value guests.
