It varies by category. Spirits typically run leanest, with beer and especially wine running higher. Rather than chase one number across the whole bar, track pour cost by category and watch the trend — a rising percentage on a stable menu usually means over-pouring, waste or shrinkage rather than a supplier price change.
Divide the bottle size by your pour size. A 750ml bottle at a 30ml pour gives 25 serves; at 45ml it gives about 16. This calculator shows the yield so you can see what a heavier pour actually costs you across a bottle.
For a true drink cost, yes. Add each mixer, syrup and garnish as its own ingredient line. Pour cost in the strict sense covers only the liquor, but the number that matters for pricing is the full cost of what goes in the glass.
