It depends entirely on format. A fast-casual counter may turn a table five or six times over a lunch service, while a fine-dining room turning twice in an evening is doing well. Compare against your own history rather than an external benchmark.
RevPASH is revenue divided by the number of seats multiplied by the hours of service. It is useful because it captures both how full you were and how much each guest spent, in one number.
Only to a point. Rushing guests damages the experience and the review score, and the extra cover is worth nothing if it costs you a regular. The productive gains are usually in the dead time — how quickly a bill lands and a table gets reset, not how fast people eat.
