A modifier is a structured option attached to a menu item — size, milk, doneness, extra shot, no onions. Structured modifiers can be reported on; free-text notes cannot.
In a café almost every drink carries modifiers, which makes their speed and structure the difference between a workable and an unworkable system during a rush.
The reporting difference matters more than it first appears. A structured modifier lets you see how much oat milk you actually sell, and therefore what to order. A note in a text field tells you nothing.
